Sweet time... and why not? Never mind the calories, but for those who do, around 370 per portion.


12 sheets of ready-made ‘fyllo’ pastry
1 cup butter/margerine (Vitam)
1/2 cup sugar
9 cups milk
21/4 cups semolina (fine)
6 eggs (beaten)
1 1/2 level tsps vanilla

For the Syrup
6 cups sugar
3 cups water
Peel of 1 lemon and juice
1 tsp vanilla

Note: you will need a pastry brush (or small paint brush) and an oblong baking tin.


1. Heat sugar and milk in a saucepan and add the semolina a little at a time, stirring constantly. Before it thickens completely remove from heat.
2. Gradually add the beaten eggs and vanilla, stirring well.
3. Melt butter/margerine. Grease baking tin.
4. Individually coat 6 fyllo sheets with melted butter or margerine and spread them over the baking tin.
5. Pour mixture into tin and repeat the process with the other 6 fyllo sheets. To cover mixture, edges can be folded over each other.
6. Place in pre-heated oven at 180C. Bake for 30-35 minutes until top is golden brown.

For the Syrup
1. Boil sugar and water in saucepan.
2. Add lemon peel. Remove juice from lemon and add vanilla.
3. Leave to boil 10-15 mins. As soon as you remove the galakto-boureko from oven, pour the hot syrup over it.

If it is to be served warm, add ice-cream on top.
