Octopus with Macaroni
(oktapodi me makaroni kofto)

To make 2-4 portions

1 kilo octopus
1/2 kilo of short macaroni
1/2 kilo fresh tomatoes / tin of chopped tomatoes
1 cup of wine
1 1/2 cups olive oil
1 large finely chopped onion
salt and pepper

1. Wash and cut the octopus into medium sized pieces.
2. Put in a saucepan and boil until moisture has been absorbed.
3. Add the chopped onion and oil. Cook until onion is soft, stirring with a wooden spoon.
4. Add wine and chopped tomatoes, a little salt and pepper and 1 cup of water. Leave to simmer until octopus is soft.
5. Add some more water, then add the macaroni.
6. When macaroni is cooked and all the water has been absorbed, serve hot.
